Sugared Black Raspberry Tea Cookies

20091112_teascookie1

I wish I could take credit for these tasty morsels, but alas, I cannot. My friend found this amazing recipe on AllRecipes.com and made them for our co-hosted tea party. They were sugary morsels of bliss with their crunchy sugared outsides, soft insides speckled with mini chocolate chips and of course the black raspberry jelly over the top. Mmmm… Good!

4th of July

It’s late to be talking about the 4th of July, I know, but I had some pics archived that I’ve been meaning to post for a long time. So, sorry for the delay, but here they are nonetheless. Maybe we can just consider this very early planning for 2010 celebrations, right? Hope you enjoy the pics and recipes!

Extraordinary Desserts Review

Extraordinary Desserts

If you’ve never been to San Diego, California,  you need to plan a trip – stat. If for no other reason than to visit this darling dessert shop.  They have two locations in the San Diego area. I visited the one on 5th Street, right next to Balboa Park and right next to Nature-Express, a fascinating little vegetarian restaurant. (Unfortunately, I didn’t get to eat there since I had just come from another veg place across town. Had I known, I would have planned that one a little better).

Located in a cute cottage style house with both indoor and outdoor seating, this place is a little taste of heaven. I think I committed every single one of the 7 deadly sins just walking in and eating here!

Lime Meringue Cupcakes

My mom turned 60 a few days ago and requested lime meringue cupcakes from me. They were scrumptous! The vanilla cake was dense, just sweet enough, and with a nice warm vanilla flavor. The lime curd was delicious. I absolutely love lime curd anyway, so you won’t find me complaining when the curd is in a cupcake. And last, but not least, the meringue frosting was fabulous. It was a dense meringue – not too airy, but just fluffy enough. And it wasn’t overly sweet.

The best part about this recipe is that the curd used egg yolks, the meringue used the whites and I didn’t have any random whites or yolks leftover leaving me wondering what in the world I was going to do with them! Major kudos to whomever thought up this recipe and figured out how to not waste egg parts!

Speaking of kudos… I got the recipes from “Cupcakes” by Shelly Kaldunksi

Eggnog Latte Cupcakes

I love eggnog. I love lattes. I anxiously await the holiday ‘red cup’ drinks every year from Starbucks. I love cupcakes. Why not put them all together?

The result? A latte cupcake with eggnog frosting. Perfection! My friends with whom I shared these all stated with conviction that they could eat 10 of them.

Chocolate Cupcakes with Green Tea Frosting and Red Bean Paste

My sister came to me a few weeks prior to her birthday party and asked me to make cupcakes for her Japanese/Asian-themed party. What better way to kill two birds with one stone than for this month’s Iron Cupcake challenge using the “Chocolate with a Twist” theme. You can vote for me starting December 25h and help me win, if you’d like.

An exotic mix of flavors, a mocha laced chocolate cupcake filled with red bean paste and green tea matcha frosting, these cupcakes are not for the faint of heart. The flavors are fairly eclectic and can be somewhat of an acquired taste. However, they work together beautifully creating a unique blend of decadence and cultural surprise.

Thankfully, the majority of the folks who attended her party were up for the challenge to the good ol’ ‘buds and actually enjoyed the mix of flavors.

Fall recipes I want to try

Carrot Persimmon Cupcakes

These are from the brand new blog I Dream of Dessert by the same author as the recently closed blog “Cupcake Blog”. I’m glad they opened a new blog since making the decision to stop blogging at the cupcake blog spot. The recipes are unique and the photos are beautiful. I can’t wait to see what new creations they come up with next.

Seitan Roulade with Chestnut Stuffing

From the VeganYumYum blog, I wish I was a guest at their house this Thanksgiving! This recipe makes the perfect turkey alternative. It looks amazing. If I had more time this Thanksgiving, I would have definitely tried it. Maybe next year!

Nikki’s Sweet Potatoes

I’m 95% sure I’m going to make these from 101 Cookbooks for our Thanksgiving dinner tomorrow. They look amazing. I can imagine the coconut milk, macadamias and ginger are the perfect compliment to the sweet potatoes.

Pumpkin Twinkies with Meyer Lemon Filling

I have a soft spot for the Hostess Twinkie. I’m not entirely sure why, considering the thing is nearly indestructible and the worst thing in the world for one to consume considering all the horrible ingredients. But that aside, the concept of a cake filled with some yummy cream is defintely something up my alley. I think of it as a rectangular filled cupcake with no frosting. These pumpkin twinkies sound great and filled with a zing of meyer lemon cream filling… Yum.

Vegetable Lasagna with Goat Cheese

I love goat cheese. I’ve found it compliments a great number of dishes from sweet to savory and this lasagna with all kinds of vegetables and goat cheese would make a great cold night, hearty meal.
