Bethany - Good question. I sort of wondered the same thing, thinking that wouldn't be nearly enough. But it actually is! Just chop them up into small slivers and the strong flavor carries throughout the pie but not in an overwhelming way. It gives it a nice undertone of kalamata flavor without being overbearing. Also, I think just having the 3 keeps the nutritional value low. Olives pack a pretty high calorie/fat punch. But if you're an olive fan and not worried about the extra cals/fat it adds, by all means add more! :)
