Island Sweet Potatoes


These are some of the yummiest and addicting mashed sweet potatoes/yams ever! With a great blend of flavors – sweet potato, pineapple and coconut milk, they are definitely our new Thanksgiving tradition.

Island Sweet Potatoes

  • 4 medium orange sweet potatoes (or yams)
  • 1/3 cup coconut milk
  • 2 Tablespoons maple syrup
  • 1 teaspoon course kosher or sea salt
  • 1/2 cup pineapple, crushed and drained
  • 2 Tablespoons butter (or olive oil)
  • 1/3 cup macadamia nuts, toasted
  • 1/3 cup unsweetened coconut, shredded
  1. Heat oven to 375. Wash potatoes and stab with a fork multiple times. Wrap each potato in foil and bake for at least 1 hour, until they are a soft, butter consistency.
  2. Let potatoes cool slightly then peel. Mash with a hand masher or, for a creamier texture, use an electric mixer.
  3. Add butter, pineapple, coconut milk, maple syrup, and salt. Mash and blend until well combined.
  4. Sprinkle coconut and macadamia nuts over the top.
  5. Bake 15-20 minutes until hot.

  1. Yeah, I have you to thank for the basic recipe! I just added a few additions (like the nuts on top). DELISH!!! I think I’m going to have to make some another day – not on thanksgiving.
