
These are some of the yummiest and addicting mashed sweet potatoes/yams ever! With a great blend of flavors – sweet potato, pineapple and coconut milk, they are definitely our new Thanksgiving tradition.
Island Sweet Potatoes
- 4 medium orange sweet potatoes (or yams)
- 1/3 cup coconut milk
- 2 Tablespoons maple syrup
- 1 teaspoon course kosher or sea salt
- 1/2 cup pineapple, crushed and drained
- 2 Tablespoons butter (or olive oil)
- 1/3 cup macadamia nuts, toasted
- 1/3 cup unsweetened coconut, shredded
- Heat oven to 375. Wash potatoes and stab with a fork multiple times. Wrap each potato in foil and bake for at least 1 hour, until they are a soft, butter consistency.
- Let potatoes cool slightly then peel. Mash with a hand masher or, for a creamier texture, use an electric mixer.
- Add butter, pineapple, coconut milk, maple syrup, and salt. Mash and blend until well combined.
- Sprinkle coconut and macadamia nuts over the top.
- Bake 15-20 minutes until hot.
